We always recommend hand washing to protect the blade’s sharpness and the finish of the handle. Use a ceramic honing rod regularly to keep the edge sharp for longer. Store the knife properly on a magnetic strip, in a knife block or with a blade guard, and care for the handle with oil when needed to preserve its depth and lustre.

Uncompromising precision

At a professional standard.

Meet Apex Pro – an uncompromising 3-layer Damascus knife with a core of Japanese AUS10 stainless steel from Aichi Steel in Tokai. The signature hammered tsuchime finish creates small air pockets that reduce friction and help ingredients release more easily from the blade. Each knife is hand-sharpened to a precise 15° edge angle, optimized for the steel’s properties, ensuring an ultra-sharp and highly controlled cutting experience. The handle is inspired by Asian design language and crafted from FSC-certified pakkawood, combining balance, grip and aesthetics in one harmonious whole. The name Apex originates from Latin and refers to the highest point – the summit. Pro stands for professional performance. Together, the name captures the ambition: uncompromising performance in every detail.

Focus on the steel.

Born of fire, perfected in ice.

Apex Pro is crafted from 3-layer (san-mai) Japanese Damascus AUS-10 stainless steel produced by Aichi Steel in Tokai, Japan. Aichi Steel is a renowned manufacturer of specialty steels and the developer of the AUS series, which is used in a wide range of premium knives.

AUS-10 is the most advanced grade in the series and was developed with a focus on sharpness, corrosion resistance, wear resistance, and ease of maintenance. Its high carbon content, combined with chromium, vanadium, and molybdenum, provides excellent hardness, strong edge stability, and long-lasting sharpness.

The steel is processed in Sakai and Echizen, where centuries-old knife-making traditions meet modern metallurgy. The blade is heat treated at approximately 1000–1050 °C and subsequently undergoes cryogenic treatment down to around −180 °C, optimizing hardness, wear resistance, and edge retention. The result is a hardness of approximately 60 HRC combined with excellent corrosion resistance.

The laminated construction, featuring a hard AUS-10 core between two tougher outer layers, creates an optimal balance of hardness, strength, and flexibility. The blade geometry, with a spine thickness of approximately 2 mm, contributes to low weight, high rigidity, and precise cutting dynamics.

Each knife is hand sharpened to a precise 15° angle per side, ensuring an exceptionally sharp and long-lasting edge. The surface combines a Damascus pattern with a tsuchime finish, which reduces friction and food adhesion for more efficient cutting performance.

Pure geometry. Pure control.

The angular Japanese handle is developed with a focus on precision, ergonomics and perfect balance. Its symmetrical geometry ensures a stable grip and makes the handle suitable for both right- and left-handed users.

The dark, solid-coloured FSC-certified pakkawood adds an exclusive, understated look. The material is dimensionally stable, durable and resistant to moisture.

Here, functional clarity is united with a stringent and timeless design language.

Technical finish. Sharper results.

The signature look of the Apex Pro knives is not just aesthetics – it is function with a clear purpose.

The hammered tsuchime finish creates a micro-relief in the steel’s surface that reduces the contact area between blade and ingredient. The result is lower friction, less food sticking and more efficient cutting performance.

Tsuchime is therefore not merely a visual element, but a technically integrated finish that enhances blade precision and performance.

Keep away from the dishwasher.

To preserve the knife’s sharpness, finish and balance, we always recommend hand washing. Regular use of a ceramic honing rod combined with proper storage ensures the knife remains in optimal condition for many years. Avoid the dishwasher to protect both the steel’s performance and the handle’s finish.
